In the world of barbecue, champion pitmaster Mike Mills is affectionately known as “The Legend.” He presides over the pits at his two nationally acclaimed 17th Street Barbecue barbecue restaurants in Southern Illinois. Mike is the only barbecuer with top-security clearance to board Air Force One. When the most powerful man in the free-world wants BBQ, he calls Mike Mills.
In 2005, Mills’ daughter Amy Mills Tunnicliffe shared his “Magic Dust” recipe with the world in a bestselling book called “Peace, Love, and Barbecue”. It shocked the bbq world that one of the world’s most famous pitmasters would willingly share his recipe. But there it was in black and white.
It’s been rumored that Mike’s Magic Dust has 18 ingredients. We doubt anyone will ever know for sure exactly how many spices are in his authentic Magic Dust recipe. What we do know is the recipe he shared with the world is only 9 ingredients.
That doesn’t make it any less delicious. The recipe below is the perfect bbq rub. You’ll be stunned at how many different foods Magic Dust compliments like no other rub.
But it also makes you wonder how good it would be if you could get your hands on the other 9 ingredients!
The way we look at it, if our homemade rub can be half as good as Mike Mills, that’s good enough for us.
Mikes Magic Dust
- 1/2 cup paprika
- 1/4 cup Kosher salt (finely ground)
- 1/4 cup Turbinado sugar
- 2 tablespoons mustard powder
- 1/4 cup chili powder
- 1/4 cup ground cumin
- 2 tablespoons ground black pepper
- 1/4 cup granulated garlic
- 2 tablespoons cayenne
Gather all ingredients together.
Mix ingredients together in a jar. Store with lid tightly covered.
